South Austin Mom's Favorite Granola Recipe - Greater Austin Moms

 

We live, we learn. As my husband and I have been learning more about our nutritional choices, and in particular the effects of those choices on our children’s bodies and brains we’re determined to make better choices this school year. Our most recent choice is to replace the cereals we’ve been buying with simple home made breakfasts. One favorite on our table these days is this homemade granola. We eat it atop a bowl of yogurt with fresh fruit, and it lasts us about 2 weeks! There are so many ways to change this up with substitutions. Read to the bottom for suggestions.

 

South Austin Moms Granola

1/2 c Grapeseed Oil

1 c honey

6 c oats

1/2 c almond flour

1/4 c chia seeds

 

Preheat oven to 350. In a large mixing bowl mix oats, almond flour and chia seeds. In a saucepan, heat oil and honey until warm. Pour oil and honey over dry ingredients and mix until thoroughly coated. Spread on a large baking sheet. Place in the oven to bake, stirring after the first 10 minutes and again every 5 minutes, until desired goldenness and crispness is attained. Keep in mind it will continue to crisp as it cools.

 

Optional substitutes:

1 c flour for 1 c oats

1/2 brown sugar for 1/2 c honey

1/4 almonds or other nut for chia seeds

1/2 c desiccated coconut for almond flour

1/2 c dried cranberries or raisins (optional, I leave these out because I prefer fresh fruit)
