Two, the additives and sugars are there to mask flaws! What about sulfites? Sulfites are naturally occurring antioxidant and antibacterial compounds in grapes that protect the wine from oxygen until it reaches your glass! Because of the slow-crafted, intentional way these wines are made, they require very little sulfur additions to remain stable. The FDA allows up to 350ppm (parts per million), which some people find gives them adverse side-effects. Most S&C wines have less that 50ppm, and ALL have less than 100ppm. Sulfites are added to preserve and enhance flavor in mass produced wines. S&C wines are so naturally delicious nothing needs enhancing!
